Offering a completely different experience from the Esplanade branch, the VivoCity outlet shines the spotlight on dry-aged Australian beef and Josper oven-grilled lamb, poultry and seafood dishes. The Australian-inspired restaurant serves only the highest quality meats carefully sourced from Australian farms.
Take your first steps into Barossa and not only will you smell the scent of grilled beef wafting in the air, but you will also see the restaurant’s huge cabinet filled with a curated selection of Australian beef. The Dry Ager is a special fridge that can dry-age bigger beef cuts such as porterhouse and tomahawk for 50 days. Smaller cuts such as tenderloin and striploin are aged for about 25 days.
If you have never tried dry-aged beef before, you are in for a flavourful surprise! The dry-ageing process causes the natural enzymes in the meat to break down some of its collagen, resulting in a highly tender texture. This also results in the beef losing a percentage of its total weight due to water evaporation, leading to a more concentrated and intense flavour.
Since dry-aged beef takes the centre stage at Barossa, the must-try main dish is the Australia Premium 50-day Dry Aged Porterhouse (600g, $138). This large, delicious dish is best shared among two to three people, along with a bunch of sides.
If you like your beef with more marbling and a more subtle flavour, the Australia Full Blood Wagyu Ribeye MS7/8 (300g, $98) is the one for you. Utterly buttery with a soft melt-in-your-mouth feel, this steak, although just 300g, has enough fat to keep you full for the night. Do note that this cut needs to be pre-ordered as its supply is limited every day. So, it’s best to call and check beforehand.
Each beef dish is served with a soft and warm garlic confit and your choice of sauce, from specially concocted inhouse sauces like Whisky Double Mustard and Chimichurri Sauce to others like Tarragon Béarnaise, Red Wine Bordelaise Sauce and Truffle Brown Jus (additional sauce for $4).
Apart from its premium beef cuts, Barossa also offers seafood dishes, such as the Õra King Salmon, “The Wagyu of Salmon” ($35) that features the succulent, and richly flavoured New Zealand King Salmon paired with smoked Romesco, Yuzu Beurre Blanc with Ikura, and grilled broccolini. Similar to the Wagyu, the salmon is delightfully soft and just melts in your mouth.
Served wrapped in parchment paper, the Locally Farmed Barramundi Fish “Papillote”($28) is also worth a mention. This dish is baked with aromatic vegetables and potatoes, then served with sauce vierge. The flaky, moist meat is imbued with a refreshing and citrusy note.
For those who came hungry (as you should), complement your meal with sides such as Pan-fried Foie Gras ($18), Black Truffle Mashed Potato ($8), Truffle Fries with Parmesan Cheese ($12) and Sauteed Rosemary Field Mushroom ($12).
At Barossa VivoCity, all dining sessions begin with a serving of fragrant focaccia bread drizzled generously in Australian olive oil. Appetisers include Ah Hua Kelong’s Tiger Prawn ($26), a smoky and juicy charcoal grilled prawn dish served with charred kale, shio kombu garlic beurre noisette and pickled onion.
Another standout is the Barossa Steak Tartare ($26). This cold and raw appetiser features smoked oyster aioli, ponzu jelly, pickled red onion, wasabi zuke, egg yolk and crisp bread.
Last but not least, cap off your meal with some dessert. The Jasmine Infused Smoked Fig Mochi Cake ($18) is a unique one to try — a chewy fig mochi cake infused in jasmine smoke and accompanied by jasmine white chocolate ganache and passionfruit gel.
For those wanting something familiar, you can never go wrong with a chocolate dessert. The Frozen Dark Chocolate Whiskey Souffle ($18) is a wonderful medley of fresh berries, chocolate pearls and spiced crumble. The whiskey also gives this dessert an overall extra punch.
Located by the boardwalk of VivoCity, the restaurant overlooks the tranquil water leading to Sentosa Island, making it the ideal location for a scenic evening replete with intimate conversation and good food. Diners seated at the al fresco section can also enjoy a special al fresco menu that features tapas, cheese platters and pizzas.
