Located on the penthouse floor of OUE Bayfront on Collyer Quay, VUE is set to be the next iconic rooftop bar and grill destination overlooking stunning vistas of Marina Bay and the Singapore skyline. It is a concept by OUE Restaurants, the food and lifestyle division of locally listed integrated property developer OUE.
VUE has three focal areas — the 60-seat main dining room, an al fresco pavilion with a spritz bar that seats 36 and a private dining room that seats 12. Each space presents a picture-perfect backdrop for gatherings, from networking events and product launches to celebratory dinners and wedding receptions.
The al fresco bar is Singapore’s first rooftop spritz bar. Here, you can enjoy your drink with an amazing view. There is a vibrant and flavourful range of spritz cocktails, from popular favourites to innovative concoctions.
VUE Royale is a zesty mix of champagne and umeshu with a hint of bourbon
Among the signature spritz cocktails is Isphahan ($16), a fruity and sweet drink that is rather popular with the ladies. It is a refreshing mix of raspberry-infused gin, lychee and grapefruit. Another must-try signature drink is the VUE Royale ($24), a zesty mix of champagne and umeshu with a hint of bourbon.
The spritz experience at VUE is accompanied by a beautiful and delicious presentation of charcuterie and cheeseboards. During the sunset hours of 5pm to 7pm, spritz cocktails come with complimentary servings of canapés.
After watching the sun set over the horizon, head over to the main dining room for dinner.
At the restaurant, executive chef Sam Chin introduces his creativity into dishes that focus on specially sourced ingredients and peak-of-season yields in an eclectic fusion of east and west.
“I personally hand-pick [each] component that goes into every dish served at VUE,” says Chin. “Beyond flavour and technique, I want my creations to also reflect the respect I have for the origin and purity of the ingredients I use.”

If there is a steak worthy of splurging on, it would be the A4 Emperor “Kokuou” Black Wagyu tenderloin ($138 for 180g), which is imported from Kyushu island. This melt-in-your-mouth beef is smoked using the restaurant’s signature binchotan, then slow-roasted for over 20 hours.
To keep most of its beefy flavours, the steak is served lightly seasoned with rice salt flakes, along with onion marmalade and potato mash, as well as a red wine and beef jus reduction on the side. This dish is only served after the sun sets and is limited to 20 portions per day.
End the night on a sweet note with some dessert. Options managed to try one of VUE’s festive desserts. The Chestnut ($18) is a decadent dessert featuring a delicate cocoa nib tuile (baked wafer) served on a bed of silky chocolate mousse, accompanied by fresh raspberries, chocolate truffle and chestnut ice cream, all topped with fresh truffle shavings. This dish is also available as part of VUE’s festive set menu ($138++ for four courses) until Dec 31.
