Award-winning tipples
28 HongKong Street

This Sept 20, Singapore’s beloved speakeasy bar, 28 Hong Kong Street, will see a bar takeover by former alum Arijit Bose, founder of Tesouro by Firefly in India. Together with co-founder Pankaj Balachandran, the pair, who are flying in from India for this exclusive one-night event, will be serving their award-winning libations from 8 pm onwards.

Launched in 2020 in India’s sunshine state of Goa, Tesouro by Firefly has been ranked four4th place on Asia’s Best Bars 2022. Over here, well-chosen spirits range from fine rum, craft gins, and agave spirits, to local heroes like feni (a local Goan-distilled spirit made from cashew or coconut). The cocktail menu showcases the bar’s creativity, such as Midnight Brekkie (gin, Bianco vermouth, peanut butter, watermelon and, strawberry), topping the ranks as the most popular drink.

EAT
Sample F4 purebred wagyu
Bedrock Bar & Grill

As part of its quarterly World Meat Series — showcasing premium and lesser-known meats from around the world — Bedrock Bar & Grill now shines a spotlight on Pardoo Okan Wagyu in a five-course dinner tasting menu ($148++ per person) available till Nov 30. A four-glass wine pairing can be topped-up at $88++ per person.

The meal starts with the Smoked Beef Tartare on Bone Marrow, followed by the Soy Marinated Roasted Wagyu Beef Carpaccio; Black Truffle Potato and Beef Rissoles, Twice Cooked 24 hours Wagyu MB7 Boneless Chuck Rib; and a classic Chocolate Cremeux with hazelnut praline sauce, white sesame brittle, and fresh raspberries.

Due to the leaner consistency of this type of wagyu — which has won three gold medals in the 2020 and 2021 Australian Wagyu Association Competition — the meat tastes better when in raw form, like the tartare, where you can savour its silky full-bodied buttery flavours. A hands-down favourite is the chuck rib, slow-cooked overnight in a smoker to retain all its beautiful flavours, and pulled together with a lip-smacking porcini mushroom emulsion.

Raised in the desert-like Pilbara region of Western Australia, Okan Wagyu by Pardoo Beef is characterised by its name as being fit for the emperor. Selected for its outstanding genetics, the F4 Purebred Wagyu herd is raised in a man-made oasis amidst arid conditions where the cattle have the chance to grow slowly while on a vegetarian grain ration diet. This results in a leaner evenly-marbled beef that gives a distinct umami flavour and buttery consistency.

Plant-based Mondays
Little Farms

Country Foods, a wholly-owned subsidiary of Sats Foods, is partnering Little Farms Bistro at Katong Point, to showcase its wide array of plant-based meat brands in a five-course tasting menu, available every Monday in the month of September.

Curated by Jason Green, group executive chef of Little Farms, the meal kicks off with the Fable Slider Smash & Olive Oil Bruschetta that features Aussie-American brand Fable’s plant-based meat made from real shiitake mushrooms. That ’is followed by local “seafood” brand HAPPIEE! Squidee, a really delicious calamari replica using HAPPIEE! “squid '' made from konjac.

The next is the Burgundy Braised Fable Ragout cooked for five5 hours to achieve the same texture as pulled pork, which is doused in a piquant truffle jus. Our favourite dish is Aussie label v2’s Smoky Pork & Spinach Crepe Alfredo – which features a legume-based meat alternative that has an addictive smoky flavour. It ’is wrapped in a thin crepe with spinach and topped with a comforting white sauce that reminds us of a savoury cannoli.

To cap off the vegan experience, we indulge in a rich Chocolate Avocado Mousse made with 60% Valrhona chocolate and avocado mash, served with chocolate soil and strawberry crisps. At $48++ per person, this menu is a very affordable introduction to those keen on trying different plant-based brands. For reservations, call 6241 2803.

If you love cocktails, we highly recommend the Tepache Twist Cocktail ($15++) as an after-dinner tipple. The zero-waste drink features homemade Tepache, which is a fermented alcoholic beverage made from leftover pineapple peel, rind used from the coffee bar, and aromatics from the kitchen such as star anise, cinnamon cloves and sticks.
