EAT | Umbrian black truffles | Osteria Mozza
Celebrity chef Nancy Silverton will be in town to celebrate the season of black truffles with a special one-night-only Umbrian Black Truffle Tasting Menu on Feb 23 at Osteria Mozza. The highly-prized truffles from Umbria will be used in a family-style four-course dinner experience at $198++ per person.
The medieval countryside city of Umbria reputed as one of the top culinary regions in Italy and famous for its foraged truffles and wines, has been Silverton’s holiday home, where she spends half the year while away from California. It is a place where she spends cooking for family, experimenting and learning from other local restaurant owners and farmers.
The tasting menu will feature a selection of dishes that showcase the best of Umbria's culinary traditions and the flavours of the Italian countryside, including the Rigatoni Rigati alla Norcina with pork sausage, white wine, cream and black truffle; and the Pan Seared Sea Trout with Umbrian lentils, red cabbage sottaceto and boiled egg.
For an additional $100++ per person, diners can toast to exquisite Italian wines like the Paolo e Noemia d’Amico, Noturno dei Calanchi from Umbria, and Bastianich, Vespa Bianco, Friuli-Venezia-Giulia.

Penfolds wine dinner | Cloudstreet
Fresh from his return from Michelin-starred chef Mauro Colagreco’s estate in France — sponsored by Penfolds — chef Mark Tai of Cloudstreet has selected an exclusive seven-course wine-tasting menu to feature some of the best vintages from the Australian winemaker.
Singapore's first Michelin Guide Young Chef awardee and head chef of Michelin-starred restaurant Cloudstreet, Tai, will offer a special menu available for lunch and dinner for three months from February at Cloudstreet. Wines handpicked for the seven-course menu will offer connoisseurs a chance to taste seven outstanding wines from the Penfolds Australia and France Collection. They include Penfolds Cellar Reserve Chardonnay 2018, Penfolds Grange Shiraz 2017, Penfolds Grandfather 20YO Tawny Port, and more.

Two-course Michelin lunch | Nouri
Michelin-starred restaurant Nouri, helmed by chef Ivan Brehm, unveils a new weekday lunch menu that changes every week. The two-course menu will feature a starter and a main that reflects the season’s best produce, and each dish is collaboratively designed by Brehm and his team as a distilled experience of Nouri’s Crossroads cuisine. The result is a light and easy lunch that nourishes the mind and body.
Guests open their meal with Nouri’s signature Bread and Broth, a rye sourdough paired with a clear restorative broth made with seven types of vegetables and silken cheese dip. This welcome snack symbolises the breaking of bread — part of the restaurant’s philosophy in sharing experiences and provides the comforting nourishment of a warm soup. The steamed silken cheese dip, a nod to silken tofu, paneer and posset, also introduces guests to Crossroads Thinking in presenting the shared traits of different cultures worldwide. In this case, Brehm has found unctuous custard textures universally delicious across many culinary traditions.
The meal is followed by two courses — a starter and a main, which change weekly in tandem with the season’s peak of harvests and produce. Guests can expect dishes such as Hamachi Tiradito with charred heirloom tomatoes, tamarillo broth and aromatic oils, Duck and Physalis, 15-day dry-aged magret of duck, parsley root purée, and caramelised physalis with sand turmeric pickle.
This two-course lunch menu priced at $68++ is available Wednesday to Friday, 12pm to 2.30pm. Add-ons are available for guests who wish to have a heartier meal or end with a sweet treat. Updated menus can be found on nouri.com.sg, along with a reservation function to make a booking.
DRINK | Cocktails on tap | Underdog Inn
The latest concept from the team behind Sago House, Low Tide and Ghostwriter, Underdog Inn brings nose-to-tail dishes, draft cocktails and an eclectic art collection to Amoy Street. Evoking the feeling of a New York tavern — sitting in the middle of a concrete jungle — Underdog is a celebration of counterculture and the successes of those who have raised the bar socially and artistically. The space juxtaposes design with plush banquettes amidst statement art pieces mounted on graffiti-covered walls throughout a dimly lit room.
Bar manager Lee Rizali and owner Jay Grayhave have put their unique spin on California’s 18 Taps Tavern with their version offering 12 draught cocktails and six beers on rotation, with a heavy focus on whisky and agave. Sip on a classic cocktail from the tap, such as the Martini ($25++), Gran Torino ($18++) or Old Fashioned ($25++) - with tableside modifiers to adjust to the guest’s preference.
Underdog also offers a delicious array of sharing plates with a nose-to-tail open fire-only cooking concept. Sourcing whole animals from an Australian meat purveyor, executive chef Pete Smit will utilise every part of the animal, meaning that the “specials” board will change daily. However, the main menu of cuts from land and sea will always be ready to fire, which includes Smoked Beef Neck with kimchi ($36), Pork Loin with kale and chimichurri ($40) and Squid with brown butter and smoked almond ($28). A selection of smoked and grilled sides are complemented by bright and zesty pickled and fermented vegetables, with highlights including the beloved Bone Marrow Mash ($16), Smoked Carrot, Ricotta and Pickled Jalapeno ($14) and Baby Gem Lettuce, Sunflower and Pickled Shallots ($10). Smaller dishes such as Pig Head Scrumpet and Apple Ketchup ($14) and Lamb Tartare with smoked emulsion and cured yolk ($24) are available while guests wait for their choice cuts grilled over the open fire.
