EAT | Divine Cantonese flavours | Man Fu Yuan
This April, Man Fu Yuan at InterContinental Singapore presents for the first time a limited edition showcase of heritage Cantonese flavours via individual and sharing set menus of reimagined classics as four celebrated chefs come together for 8 Hands — Taste Of The Yesteryears (今日事,当年情).
From April 1 to 30, diners can enjoy specially curated set menus that spotlight reimagined traditional classics by the stalwarts of Cantonese cuisine in Singapore, chefs Pang Lu Tin, Fok Wing Tin, and Peter Tsang, along with Man Fu Yuan’s executive Chinese chef Aaron Tan.
This lunch and dinner experience comes in two exquisite six-course sharing menus suitable for groups of three to five diners, as well as six and seven-course individual menus with options for wine pairing, ranging between $88++ and $398++. The menus will showcase dishes conceptualised by each of the master chefs and will be presented in a harmonious evolution of delicate appetisers, comforting soups, meat and seafood mains, vegetable dishes, rice and noodles, and the sweet finish of the dessert.
Apart from sampling these exquisite dishes, diners will also enjoy interacting with the master chefs present on rotation to speak with guests and share anecdotes on their craft, technique and choice of dishes and ingredients. Reservations can be made via singapore.intercontinental.com/mfy8hands

Lunch omakase | Noka by Tippling Club
Discover a culinary journey at Noka by Tippling Club with its new seven-course omakase lunch at $80++. The unique experience, curated by chef-owner Ryan Clift, deviates from traditional Japanese omakase. Each course is expertly curated to showcase the flavours and textures of modern Japanese fare, offering Noka’s innovative ingredient-focused dining experience at an accessible price.
Begin your lunch with the delicate Scallop Snow Crab containing seared scallops and Japanese snow crab enrobed with shungiku in yuba atop a refreshing vinegar jelly. Open your palate further with the sashimi courses of Hirame garnished with ikura, hanaho flowers, menegi and Amaebi accompanied by myoga, fresh wasabi and greens harvested from the edible garden.

A hearty Gindara Saikyo Miso comes next and features seared, oven-roasted black cod served with wild rice and nori, doused in a piping-hot reduction of deep-fried cod bones boiled for over seven hours. The Unagi Rice Cracker presents a harmonious blend of texture and flavour: The glazed eel is served with a cracker made from pan-seared rice that is then broiled in a salamander oven for an extreme crunch.
The omakase lunch ends with a selection of seasonal Japanese fruits, which changes frequently and includes favourites like umeshu-compressed melon, Japanese persimmon and snow-white strawberries.
Noka by Tippling Club Lunch Omakase is available every Tuesday through Friday from 11:30am to 2:30pm. Visit www.noka.sg to book.
