Master Chef Goh Chee Kong of Min Jiang at One-North welcomes Spring with a vibrant floral-themed yu sheng dish made from julienned peaches, plums and kiwis. It is available for dine-in only at $88++ and $138++ per small and big portions respectively. Perched atop the giant “flower” of fruit is a mound of pomelo, wasabi tobiko and red tobiko, while encircling it are nuggets of ingot-shaped osmanthus jelly studded with blueberries as well as edible viola petals.

Stellar @ 1-Altitude rolls out its alternative interpreation of yu sheng traditions with its Lucky in Love ($58++) yu sheng dish – replete with aphrodisiacs like oysters, honey, pomegranate, figs, pine nuts, and smoked salmon. Couples who wish to celebrate Valentine’s Day in conjunction with the Lunar New Year can do so through its $688++ per couple Sky-High Valentines Day Dinner on 14 Feb, which includes a corsage for the lady, a glass each of Dom Pérignon sunset drink, and the Lucky in Love yu sheng alongside a six-course dinner with premium window seat and table-side Dessert Art experience.
3. Garden of Wealth Yusheng – Crystal Jade

A visually-arresting rendition of lo hei (Prosperity Toss) is available at Crystal Jade Golden Palace this year for both dine-in and takeaway, featuring unusual ingredients such as lily pad-shaped nasturtium leaves, freeze-dried wolfberries, ice plant and wood sorrel red leaves. The Garden of Wealth Yusheng ($88 for small, $138 for large) is artfully studded with edible flowers, while home-made caramelised deep-friend lotus root slices complement the conventional ‘pork chui’ crackers to add a sweet crunch to the concoction. Customers can also opt for baby abalone in place of salmon sashimi slices.
4. Shun De Yusheng – Yàn

Cantonese restaurant Yàn elevates the lo hei tradition with its signature ‘Shun De Style’ Salmon and Yellow Tail with Lobster Fillet Lo Hei ($128++), which is topped with golden flakes and features a tall base of fried vermicelli shaped like a mountain. This is paired with slices of ginger, spring onion and finely-grounded peanuts and finished with luxurious slices of fresh salmon and lobster fillet. The dish is also available as part of Yàn’s eight-course Lunar New Year Set Menu at $268++ per person for a group of 8-10.
5. Kanpachi Kingfish Yu Sheng – Mitzo

Mitzo Restaurant & Bar’s Kanpaichi Kingfish Yu Sheng ($78++ for 4-6 persons and $128++ for 10 persons) presents one of the finest sashimi dishes in Japanese culture, Kanpaichi King Fish, atop a bed of lychee caviar. To create this unique play on textures and flavours, Chef Nicky Ng’s savoury Chu Hou sauce is blended and shaken in a cocktail shaker before it is poured over a combination of carrots, radish, crispy vermicelli, ginger, lotus root and pistachios, with crispy salmon skin added to the mix for an added crunch.
6. Norwegian Salmon Yu Sheng – KUVO

From 26 Jan to 2 March, The Connoisseur Concerto’s KUVO is offering its Norweigian Salmon Yu Sheng ($48++ and $68.60++) on every day save for day 1 of the Lunar New Year. This dish will also come as part of the restaurant’s new multi-course Abundance, Fortune, Wealth, Happiness and Luck set menus ranging from $388++ for four persons to $1188++ for a group of 10.

Abundance, great fortune, prosperity and eternal youth are represented by citrus-cured salmon, pickled beetroot, fermented carrot and seasoned Japanese seaweed, respectively; while passionfruit and earl grey hollandaise sauce provide a sweet beginning to the New Year. This vibrant appetiser is available for a supplement of $15++ to the restaurant’s Chinese New Year set dinner, available from 16 Feb to 3 March and priced at $70++ per diner.
