When people mention “soul food”, these foods are usually associated with large groups of friends and family, all coming together to enjoy not just the food but also the company. Alma, which is Spanish for “soul”, makes eating precisely that: a place where not only loved ones and food come together, but everything it takes to give an unforgettable dining experience.

At Alma by Juan Amador, indulge in Asian-influenced, Modern-European cuisine highlighted by evolutionary creations in a casual atmosphere, marked by exemplary service. Dishes are created with nothing less than the best ingredients, combined with pure culinary passion. Diners can enjoy Alma’s exceptional ambience and service both in the spacious restaurant as well as outdoors on the lounge terrace with bar.

Alma was created by Chef Juan Amador, who is of Swabian, Spanish descent, belonging to the European avant-garde. One of the best chefs in the world, he is one of the few chefs to be awarded three Michelin stars in quick succession. He has shaped the world of aromas and taste like no other, and combines Spanish temperament with German precision to create a perfect whole. His uncompromising commitment can be seen, tasted and felt in each of his creations.

Alma first received its Michelin star in 2016, and has retained its one-star rating for four consecutive years. Chef Amador has handpicked Executive Chef Haikal Johari to helm Alma’s menu and to bring to the plate a combination of Asian flavours and influences – from Japanese herbs to Thai spices. Deeply inspired by Japanese cuisine, Chef Haikal marries his training in European cuisine with hearty Asian flavours and ingredients to create titillating dishes that are exhilarating and familiar, all at once. Fresh, seasonal produce is specially flown in from different parts of the world just for Chef Haikal’s exciting creations.

This year, Alma celebrates its sixth anniversary and has offered diners a specially curated Anniversary Menu available only until the end of September.

Presented in a five-course ($198++ lunch & dinner) or eight-course ($298++ dinner only) option, the Anniversary Menu is one tinged with nostalgia as it presents Chef Amador’s inspirations and passions on a plate as well as Chef Haikal’s recollection of his mentor.

The symphony of flavours kicks off with Chef Amador’s classis Iced Buerre Blanc, a French butter sauce ice-cream starter that bursts with the sweetness of the sea, thanks to the sous vide whole oyster buried in its depths and topped with Russian caviar. This is then presented on a bed of hazelnut foam and finished with an oyster leaf.

A highlight of the menu us the Mireal Pigeon (main image), Chef Amador’s star dish of a tender and juicy pigeon breast topped with a crust of aromatic purple curry. Cooked in hazelnut oil to impart a sweet-savoury nutty flavour, the pigeon is paired with coconut puree, diced mangoes and pigeon jus.

Complementing Chef Amador’s dishes are Chef Haikal’s creations like the Swordfish ‘Toro’, an aged swordfish belly sashimi that is cured for three days, served with uni, zucchini, truffle shavings and frozen wasabi granite.

Executed with classic French techniques, Chef Haikal’s King Crab showcases steamed King Crab as a blanc manger, made with the reduction of crab shells and paired with yellow wine from Eastern France. This dish is then served with a mousseline of Japanese spring onion, fresh herbs and seaweed powder.

The Anniversary Set will be available till Sept 30 and diners can enjoy a complimentary glass of Champagne with every order of the Anniversary Set.
