Ring in the Lunar New Year season with gourmet, time-honoured provincial Chinese delicacies at  yì by Jereme Leung at Raffles Hotel Singapore. Savour an exquisite feast of appetisers, main dishes, and artisanal desserts, prepared using the best of seasonal ingredients, including Golden Roasted Duck with Passion Fruit Dressing, Double-boiled Fish Maw, Morel Mushroom and Nostoc Pearl Soup, Baked Green Asian Lobster with Salted Egg Yolk Sauce, Steamed Glutinous Rice with Abalone, Diced Roasted Duck, Salted Egg Yolk wrapped in Lotus Leaves, as well as a unique dessert special, Mashed Chinese Yam and Sweet Purple.

From now till Feb 24, enjoy these dishes in the Lunar New Year Dine-In Set Menus. And from Feb 10-24, pop by to savour the specially crafted Lunar New Year a la Carte Menu and Dim Sum Menu. 

It is tradition to toss a platter of Yu Sheng to bring prosperity. Each Yu Sheng platter is available for both dine-in and takeaway, featuring a spread of premium ingredients enveloped with the restaurant’s signature delicate, floral Yunnan rose dressing specially crafted by chef Leung. The Yu Sheng selections are available in medium (four to six persons) and large (eight to 10 persons) options, with an assortment of platters such as Fortune Yu Sheng with salmon sashimi and sakura shrimp; Longevity Yu Sheng with octopus sashimi and Japanese sweet shrimps; and Prosperity Yu Sheng, a mix of abalone, Spanish Ibérico ham and honey melon. A vegetarian Yu Sheng option is also available, featuring crispy lotus roots and organic vegetables. Prices start from $152, and orders require at least two days of advance notice.

Welcome abundance in the upcoming Year of the Dragon at Peach Blossoms in Parkroyal Collection Marina Bay Singapore. Executive Chinese chef Edward Chong and his culinary team present a collection of signature dishes, set menu and an array of Yu Sheng options. Among the signatures are the crowd-favourite Harvest Yu Sheng and Blossoming Abalone Treasure Pot, featuring an ensemble of 10-head whole abalone, sea cucumber, scallop, braised pig’s trotter, roast duck, dried oyster, live prawn, flower mushroom, lotus root, dace fish ball and radish. 

Peach Blossoms will also be presenting six Lunar New Year set menus, which include the seven-course Blessings set ($2,388 per table of 10), a six-course Year of the Dragon Imperial ($398++ per person; two days advance order required), a seven-course Delightful set ($298++ per person, an eight-course Contentment set ($188++ per person) and an eight-course Blissful set ($168++ per person). A Vegetarian Fortune set ($188++ per person) is also available. 

Toss to wealth, prosperity and fortune with Peach Blossoms’ Yu Sheng. Only available for dine-in, the Harvest Yu Sheng (from $188++) is a refreshing creation where guests are invited to “smash” a nitrogen-infused rose into a medley of kanpachi, abalone, crispy whitebait and organic mixed fruits. Other options include the Fortune Abalone Yu Sheng, Prosperity Yu Sheng with Crispy Whitebait, Prosperity Salmon Yu Sheng and Vegetarian Yu Sheng.

Feng Shui Inn

Celebrate the Lunar New Year at Resorts World Sentosa’s Feng Shui Inn, where executive chef Li Kwok Kwong has crafted a menu to enhance your festive experience. The Eternal Fortune Menu ($288++ per person) features prized ingredients in dishes such as Double-boiled Imperial Bird’s Nest, Fresh Crab Meat, Superior Stock; Stewed 6 Head South Africa Abalone, Sea Cucumber stuffed with Shrimp Paste; and Crispy Suckling Pig Fillet, Crispy Crab Claw in Thai Sauce.

Other a la carte highlights include the exquisite Lobster, Shredded Taro, Ice Plant Crystalline Yu Sheng, and Homemade Aged Vinegar Dressing. It features fresh wild-caught lobster enveloped in sweet and sour, rich, and aromatic flavours alongside crispy taro threads and crunchy sea grapes.

For a grand feast, guests can order the impressive Classic Auspicious Treasure Pen Cai ($688++ for 10 people) — a symphony of fresh and high-quality seafood, including abalone, sea cucumber, premium oysters, top-tier dried scallops, and fresh grouper.

Diners can complete the festive feast with the Golden Ingot Nian Gao ($16++ for three pieces). These ingot-shaped glutinous rice cakes symbolise good fortune and wealth, offering a subtle coconut aroma that complements the chewy texture of the dessert.
