Bees by Narisawa is the latest culinary marvel set to captivate Singapore’s discerning food enthusiasts, housed within Mandala Club. This summer, the renowned private members club is offering a five-week preview of this innovative concept by the illustrious chef Yoshihiro Narisawa. Known for his revolutionary approach to gastronomy, Narisawa brings a fresh interpretation of Japanese street culture to life, blending traditional elements with modern sophistication in a unique and intimate dining environment.
The preview, available to the public from Aug 19, precedes the permanent launch of Bees by Narisawa in October 2024, exclusively for Mandala Club members. Narisawa, a culinary icon celebrated on both Asia’s 50 Best and the World’s 50 Best Restaurants lists, is returning to Singapore after his highly acclaimed Narisawa crossover with Porsche in 2023. This new venture represents his second global dining establishment outside Tokyo, following the successful opening of Narisawa Shanghai in 2023.
At Bees by Narisawa, the chef’s deep reverence for nature and terroir is evident in every dish. The menu is a masterful reimagining of Japanese street food, elevated with sustainable Japanese ingredients, European cooking techniques and meticulously sourced seafood. This is complemented by a 700-bottle wine list that showcases terroir-driven Old World labels, alongside an exclusive selection of Dom Perignon Champagnes and the globally unique Masuizumi sake from Masuda Sake Company. The result is a dining experience that is as thoughtful as it is luxurious, where every element has been carefully curated to resonate with the richness and depth of Japanese culture.
Options had the opportunity to try out the dinner menu at Bees by Narisawa. This is more than just a dining experience; it is a celebration of culture, creativity, and the art of gastronomy, promising an unforgettable journey for all who are fortunate enough to partake in it.
The meal begins on a high note with the Yamayuki Tuna, Caviar, Brioche. The combination of silky tuna and luxurious caviar, delicately perched on a crisp brioche, is nothing short of spectacular. The contrast between the buttery richness of the brioche and the delicate oceanic flavours were enough to get my appetite rumbling for more.

The Udon, Tomato, Ikura, Uni, Scallop is an exploration of texture and flavour. The udon noodles are perfectly al dente, providing a sturdy base for the sweet, tangy and umami-packed toppings. The creamy uni, briny ikura, tangy tomatoes and sweet scallop work in unison to create a dish that is both comforting and sophisticated. The fresh tomatoes adds a bright, acidic note that cuts through the richness, making each bite a layered and complex experience.
Next, the Charcoal-Grilled Eel, Shari, Wasabi is a standout. The Anago eel boasts a smokey char that enhances its natural sweetness. Paired with shari and a touch of freshly grated wasabi, this dish is a refined take on a classic, offering a beautiful balance of flavours that is both bold and delicate.
The “Menchi-Katsu”, Potato Salad, Organic Vegetable is a delightful twist on comfort food. The Menchi-Katsu, with its crispy exterior and juicy, flavourful interior, is truly indulgent. The accompanying potato salad is buttery and creamy, making it one of my favourite dishes for the night.

Dessert begins with White Peach, Baba, a refreshing and elegant palate cleanser. The sweet and juicy white peach is complemented with a light and airy baba that has been generously soaked in rum. This was served with a side of freshly whipped cream and a sweet peach sauce.
The meal concludes with the Matcha Monaka, a sophisticated and delightful end to the evening. The crisp monaka wafer encases a smooth, rich matcha filling that is both bitter and sweet, offering a perfect balance in both textures and taste.
Overall, this dinner menu at Bees by Narisawa shows chef Narisawa’s modern take on traditional Japanese cuisines, while keeping a somewhat casual flair to it.
